Chicken and Sausage Casserole

Makes 10 servings.

Ingredients

2 packages chicken pieces

1 package chicken or pork sausage

3 green onions, chopped

1 cup grated Parmesan or Asiago cheese

2 sweetpotatoes, chopped, with skins on

1 yam or malanga root or cassava root, peeled and chopped

1 green papaya, peeled, and grated or shredded

2 cups coromandel or other subtropical greens, chopped

1 quart Chicken Stock or Bone Broth

salt and freshly ground black pepper to taste

Directions

Preheat oven to 400 degrees F.

Add all vegetables to a large casserole dish as you finish chopping them.

Sprinkle with the cheese, then place the meat on top.

Cook in the oven for 45 minutes.

Remove and cover the dish with foil or parchment paper.

Return dish to the oven and cook another 45 minutes.

Serve with pepper and salt. There is most likely salt in the sausage, so more may not be needed.
